Meal Plan Sunday

Happy Sunday friends!

I hope everyone has a had a great weekend and is gearing up for a great week ahead.

Ryan and I were both in Blowing Rock yesterday – Ryan working around in the brewery for a bit and I was helping to pour at Winterfest’s Beer Garden. We grabbed dinner and drinks after we were done working before coming home for the night.

Today, I’ve got laundry going, did the majority of my housework, and now I am sitting down to make sure we have everything we need for dinner this week.

Ryan and I typically do our grocery shopping every other Wednesday. Strange day for grocery shopping, but we get paid every other Wednesday and we love to go to Lowes Food, grab a beer, and shop together. It’s like our mid-week date night twice a month. Since we shop every other week, we shop for enough food to last us 2 weeks which takes a bit of planning. I keep a note on my phone and I typically map out what dinner is going to look like each night.

I thought I would share what we’re planning to have for dinner this week in case you need some inspiration for your own meals!

Most of what we have, I find on Pinterest – my favorite for finding and trying new recipes. We both love to cook and for the most part we’ll stick to the recipe at hand, but if we have to improvise or want to with different ingredients we will.

Starting off with tomorrow night,

Monday:

Sheet Pan Quesadillas

I love love love these because you really can make them however you’d like with whatever you have on hand!

This week, I have some wagyu beef that I had leftover in the freezer so I’m thawing that out today to use for this dinner. Super easy to throw together and we’ll most likely have it with sour cream, avocado, and salsa on the side. Leftovers on this are just okay. We don’t have a microwave, weird, I know haha but you get used to it. But, even if we did, I feel like these would heat up much better in the air fryer so they keep that crispiness.

Tuesday:

At Home Arby’s Beef and Cheddar with Sweet Potato Fries

Ryan and I typically split making dinners and this is something Ryan wanted to make!

We just grabbed a pound of thinly sliced roast beef, cheddar cheese, onion Kaiser rolls,and the pre-made Arby’s Horsey Sauce. We also picked up some frozen sweet potato fries which we will just throw in the air fryer.

All you need to do for this is heat up the roast beef on the stove, place the roast beef on the rolls, top with the cheddar cheese, and throw it in the oven with the broiler on to melt the cheese. Quick and easy weeknight dinner!

Wednesday:

Chicken Ravioli with Pesto and Veggies 

I make this for dinner often! It’s so easy and makes great leftovers also.

I have also made this without the sun-dried tomatoes just because I didn’t have them on hand. It was fine without it but using them adds a little more depth and saltiness. Also, any kind of cherry tomatoes will work, you don’t have to have different colors.

Thursday:

Hawaiian Chicken Sheet Pan

We try to utilize our ingredients in more than one meal. So, the same chicken I used for the Chicken ravioli, I’ll use for this too. We buy the big pack of chicken tenderloins and divvy it up for different meals.

I also wanted to add broccoli to this just for something green and an extra vegetable.

You could definitely eat this by itself, but we’ll cook some more rice and serve it over that.

Friday:

Steaks with Asparagus and Pierogies

Ryan makes this at least once a week and just switches up the vegetable and starch. So, since we’ve had asparagus with our ravioli there will be more of that leftover and we can use it for this. Most likely, he will saute the asparagus in olive oil with a little onion, garlic, and if we have leftover cherry tomatoes, he’ll throw those in there as well.

In the Wintertime, he’ll cook the steaks on the stove in a cast iron skillet. Again, with olive oil, butter, rosemary, thyme, and any kind of steak seasoning he likes.

For the pierogies, you can either make them on the stove or sometimes I throw them in the air fryer. We just keep Mrs. T’s in our freezer and can add them to any dinner in a pinch.

We really do try to stick to what we have planned and waste as little as possible, but sometimes we’ll get invited to hang out with friends or have a late night at work and these meals get pushed off. But, that’s okay! Life happens! We always just try to incorporate those ingredients somewhere else (like weekend breakfast) so we don’t waste as much!

 

Anyways, we’re home watching the Bills and Chiefs game…GO BILLS!! I’ll probably pour myself a glass of wine and wind down with my new book. I’ll have my January book review coming soon!
